Did you know that Maredsous cheeses are produced by hand? Our master cheese-makers wash each and every cheese in salted spring water, removing the crust from the curds with a sponge, and turning the cheese by hand in keeping with an unchanging tradition. The curds used in cheese-making form when milk coagulates. They concentrate all the elements of the milk needed to make cheese (fats and proteins).
